Ingredients:
- 4 Boneless skinless chicken breasts
- 1/3 cup Warwick Valley Olive Oil Malfoos Mango White Balsamic
- 2 tbsp Warwick Valley Olive Oil Cilantro Roasted Onion Olive Oil
- 1 tbsp lime juice
- 2 cloves garlic, mincced
- 1 tbsp honey (optional for extra caramelization)
- 1/2 tsp Kosher salt
- 1/4 tsp black pepper
- 1 cup fresh diced mango (for topping)
- 2 tbsp chopped cilantro (for garnish)
Directions
- Make the marinade. Whisk together WVOO Alfoos Mango White Balsamic, WV Olive Oil, lime juice, garlic, honey, salt and pepper until smooth
- Marinate the chicken. Place the chicken in a shallow dish or bag and pour marinade over it. Chill 30 min to 2 hours.
- Preheat the grill. Heat grill to medium high. Oil the grates lightly to prevent sticking.
- Grill the chicken. Cook 6-7 minutes per side, brushing with leftover marinade during the first half of cooking. Grill until internal temp reaches 163ËšF
- Let chicken rest 5 minutes. Top with fresh mango and cilantro before serving
