Ingredients:

  • 4 Boneless skinless chicken breasts
  • 1/3 cup Warwick Valley Olive Oil Malfoos Mango White Balsamic
  • 2 tbsp Warwick Valley Olive Oil Cilantro Roasted Onion Olive Oil
  • 1 tbsp lime juice
  • 2 cloves garlic, mincced
  • 1 tbsp honey (optional for extra caramelization)
  • 1/2 tsp Kosher salt
  • 1/4 tsp black pepper
  • 1 cup fresh diced mango (for topping)
  • 2 tbsp chopped cilantro (for garnish)

Directions

  1. Make the marinade. Whisk together WVOO Alfoos Mango White Balsamic, WV Olive Oil, lime juice, garlic, honey, salt and pepper until smooth
  2. Marinate the chicken. Place the chicken in a shallow dish or bag and pour marinade over it. Chill 30 min to 2 hours.
  3. Preheat the grill. Heat grill to medium high. Oil the grates lightly to prevent sticking.
  4. Grill the chicken. Cook 6-7 minutes per side, brushing with leftover marinade during the first half of cooking. Grill until internal temp reaches 163ËšF
  5. Let chicken rest 5 minutes. Top with fresh mango and cilantro before serving
