Ingredients

  • 1/4 cup WVOO Sage Olive Oil
  • 2 tbsp finely grated lemon rind
  • 4 thin swordfish steaks (halved)

Directions

  • Heat oil in a large frying pan over medium heat. Add sage and lemon rind
  • Season with pepper. Cook for 2 minutes or until sale is crisp. Using a slotted spoon, transfer to a plate lines with paper towels.
  • Cook swordfish, in batches, for 1 minute each side or until almost cooked through;
  • Transfer to plates. Drizzle with oil from pan.
  • Enjiy!
