Ingredients

  • 2/3 cup WVOO Milanese Gremolata Olive Oil
  • 1/3 cup WVOO Champagne Vinegar or WVOO A-Premium White Balsamic
  • 1 clove garlic
  • 2 1/2 tsp fresh rosemary
  • 1/2 tsp WVOO sea salt
  • 1/2 tsp fresh ground pepper
  • 1/2 tsp WVOO dijon mustard
  • 12 oz your favorite pasta, cooked (e.g., penne, rotini, farfalle) but any variety will work
  • 1 pint cherry or grape tomatoes
  • 8 oz. fresh spinach
  • 4 oz feta cheese

Directions

Combine olive oil, vinegar, garlic, rosemary, dijon mustard, salt and pepper. whisk together until smooth. In a large biowl, toss cooked pasta with vinaigrette jixture. Add tomatoes. Refrigerate util cold. Befor e service, add spinach and feat cheese., Toss. until well combined.
