Ingredients:

  • 1/4 cup balsamic vinegar
  • 2 TB WVOO Suyo Cucumber White Balsamic
  • 1/4 teaspoon Kosher salt
  • 1/4 teaspoon ground pepper
  • 4 cups grape tomatoes (1 pound 3 oz)
  • 1/2 cup thinly sliced white onion
  • 1/3 cup chopped fresh basil or parsley
  • 1 1/2 cups halved and sliced cucumbers
  • 1/4 cup halved Kalamata olives
  • 1/4 cup crumbled Feta cheese

Instructions:

  1. Whisk vinegar, oil, salt and pepper together in a large bowl
  2. Add tomatoes, onion, and basil (or parsley)
  3. Stir to combine
  4. Refrigerate, stirring once or twice, for at least 1 hour
  5. Add cucumber, olives, and feta cheese and toss to coat
  6. Enjoy!
