Ingredients

  • 2 cups cherry or grape tomatoes, halved
  • 8 oz. fresh mozzarella (sliced or pearls)
  • 2-3 tbsp WVOO BasilOlive Oil (Plus more to finish)
  • 1 tbsp balsamic glaze or 1-2 tsp balsamic vinegar )optional)
  • 1 small garlic clove (cut in half)
  • 1-2 tbsp fresh basil, torn (optional extra basil boost)
  • 1-2 tbsp toasted pine nuts (optional)
  • Salt (kosher or sea salt)
  • Fresh cracked black pepper
  • Crusty bread or crostini for serving (optional)

Instructions

  1. Prep the tomatoes (halve them an place into a bowl)
  2. Season: Add salt, pepper, and 2-3 tbsp WVOO BasilOlive Oil, toss gently
  3. Assemble: Arrange mozzarella and tomatoes on a plate or platter
  4. Add extras: Sprinkle torn basil and pine nuts (if using)
  5. Finish: Drizzle a little more WVOO Basil Olive Oil and balsamic glaze/vinegar (optional)
  6. Serve: Optional – rub bread lightly with the cut garlic and toast; serve alongside or under the tomatoes/mozzarella
