Ingredients:

  • 6 oz. salmon
  • WVOO Extra Virgin Olive Oil
  • WVOO Wild Fernleaf Dill Olive Oil
  • WVOO Champagne Wine Vinegar
  • Mayonnaise
  • Pickles, diced
  • Mustard of your choice
  • Capers
  • Salt & pepper
  • Rolls
  • Arugula or watercress
  • Onion (optional)
  • Cucumber, sliced (optional)

Directions:

Brush salmon with EVOO, add salt & pepper and bake until it is cooked through.

Zesty Aioli: Meanwhile, in a bowl mix mayo, small diced pickles, mustard, capers, Wild Dill Olive Oil, a splash of Champagne vinegar, salt & pepper to taste to create your zesty aioli.

Once salmon is cooked, assemble the sandwiches by adding the Zesty aioli to the bun, arugula, or watercress, and salmon (Optional: add onion or sliced cucumbers)
