These roasted carrots are enhanced with the sweet-tart flavor of apricot balsamic vinegar and savory garlic olive oil
Ingredients
- 2 pounds carrots, peeled and cut into sticks
- 2 TB WVOO garlic infused olive oil
- 2 TB WVOO Blenheim apricot balsamic vinegar
- Salt and freshly ground pepper
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat oven to 400Ëš F (200ËšC)
- In a bowl, toss carrots with garlic olive oil, apricot balsamic vinegar, salt and pepper
- Spread carrots in a single layer on a baking sheet
- Roast for 5-30 minutes, stirring halfway through, until carrots are tender and caramelized
- Garnish with chopped parsley before serving
