These roasted carrots are enhanced with the sweet-tart flavor of apricot balsamic vinegar and savory garlic olive oil

Ingredients

  • 2 pounds carrots, peeled and cut into sticks
  • 2 TB WVOO garlic infused olive oil
  • 2 TB WVOO Blenheim apricot balsamic vinegar
  • Salt and freshly ground pepper
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat oven to 400Ëš F (200ËšC)
  2. In a bowl, toss carrots with garlic olive oil, apricot balsamic vinegar, salt and pepper
  3. Spread carrots in a single layer on a baking sheet
  4. Roast for 5-30 minutes, stirring halfway through, until carrots are tender and caramelized
  5. Garnish with chopped parsley before serving
